Ingredients for the Burgers (6 burgers):
1 kg of ground chicken
1/2 red onion
10 sprigs of parsley
2 celery stalks (or 4-5 small celery stalks)
Brioche burger bun
Salt
Pepper
1 Eureka lemon
Gouda cheese
Ingredients for the Stuffed Salad:
1/2 package of pre-washed and ready spinach
A small handful of blueberries
1 1/2 tablespoons goat cheese
1 avocado
15 cherry tomatoes
2 tablespoons olive oil
Salt
6-8 walnuts
Steps for the Salad:
Put the spinach in a bowl, cut your cherry tomatoes in half and add them to the bowl.
Cut your avocado into cubes and add that too.
Crumble your goat cheese and sprinkle over the salad.
Finely chop the walnuts and add them along with the cranberries.
Add salt to taste and the 2 tablespoons of olive oil. Mix everything really well and that's it! You now have your salad for the burger filling. 🌱
Steps for the Burgers:
Place the ground chicken in a large bowl.
Add salt and pepper to taste.
Chop the celery into small cubes.
Chop the red onion very finely.
Chop the parsley very finely.
Add all the chopped ingredients to the ground chicken and mix well.
Squeeze half of the Eureka lemon into the mixture (just a touch, don't overdo it).
Tip for making perfect burgers: Use the lid of a large jar as a mold. Place plastic wrap over the lid, fill with the chicken mixture and remove the burger by pulling the plastic wrap. They will be the perfect size! 😎
Cook the burgers in a preheated pan over medium-high heat. Cover and leave until cooked through on one side.
Flip them over, place a slice of gouda cheese on top and cover again. Wait for them to cook completely (patience is key, it's better to cook them well done than undercooked, especially when they're chicken). 🧀
Preparation of the Burgers:
Place the salad we prepared on the base of the bread.
Place your burger on top and cover with the top of the bun.
Bonus: You can add a little mayonnaise and Dijon mustard. Avoid ketchup! Not only is it less healthy, but it will overwhelm the delicious flavor of the salad and chicken.
