Steps:

1. Roast the ingredients to enhance the flavors

Preheat your oven to high (about 200-220°C). While the oven is heating up, cut the tomatoes into quarters and place them on a baking sheet. Add the roughly chopped onion and garlic cloves (they can be with or without the skin, as you prefer).

Drizzle with olive oil , sprinkle with salt and pepper to taste , and add a little oregano and rosemary leaves. Stir to coat each piece. Place the pan in the oven and allow the ingredients to roast. They'll be ready when the tomatoes are golden brown, the onions are caramelized, and the garlic is soft and fragrant (this will take about 20-25 minutes ).


2. Blend to create the magic

Remove the pan from the oven and let the ingredients cool slightly (we don't want any accidents with a hot blender, do we?). Then, transfer them to the blender and process until smooth. Here you can start adding the broth, little by little, until you achieve the consistency you like: thicker for a hearty soup or thinner if you prefer something smooth.


3. Give the finishing touches in the pot

In a large pot, heat a mixture of olive oil and butter (use whatever amount your heart desires). When melted and steaming, place a colander over it and slowly strain your tomato mixture. Cook over medium heat, stirring occasionally, and adjust with salt and pepper to taste. Allow the soup to simmer for about 5-10 minutes , so the flavors can blend and intensify.
