Ingredients:
- Green beans (quantity to taste)
- Dried cranberries (quantity to taste)
- 2 eggs
- Olive oil
- Salt to taste
- Black cherry balsamic vinegar ( Olio Fino brand)
Instructions:
1. Clarification of the Green Beans:
- Start by clarifying the green beans. To do this, place the green beans in a container and pour hot water over them. Leave them in the water for about 5 minutes, until they are very green.
- Then, drain the green beans well and cut them in half if you prefer.
2. Sautéed Green Beans:
- In a frying pan, heat a little avocado oil over medium heat.
- Add the drained green beans and fry them with a pinch of salt. Stir frequently so that they brown slightly and acquire a more intense flavour.
3. Adding the Eggs:
- Once the green beans are well fried, add the 2 whole eggs directly to the pan.
- Stir quickly to mix the eggs well with the green beans. Cook until the eggs are well cooked.
4. Final Touch:
- Remove the mixture from the pan and place it on a plate.
- Off the heat, add a handful of dried cranberries and some chopped walnuts for a crunchy touch.
- Finally, drizzle a little Olio Fino black cherry balsamic vinegar over the green beans. This vinegar will give a sweet and acidic touch that will perfectly complement the dish.
